Fruit Salad with Poppyseed Dressing

This is the best fruits salads ever! It has the best poppyseed dressing I had ever tasted… so fresh tasting, not too tart and not too sweet. Use fruits that are the freshest and ripest in this delicious salad. You can also pick and choose your favorite fruits instead of the ones listed below. It’s amazing how a tiny amount of dry mustard adds a little kick to the dressing that complements the sweet fruit. Enjoy!

Beef and Mushroom Pie

This recipe is delicious and reminds me of my trip to St. Petersburg, Russia. Of course this recipe is a much healthier version of an old time favorite. During the days of the Soviet rule, russian families would bake these wonderful pies. They were inexpensive and very filling. Basically, they are just large bread loaves filled with various meats, veggies, seasoning, and fruits. Beef and mushrooms, chicken and rice, and fruit seem to be the favorites. Now days you can find them at local eateries through out St. Petersburg. Add a salad to this hardy pie and dinner is served. Enjoy!

Mango Avocado Salad

This really is one of the best combinations ever. Simple, elegant, and sensuous. Apparently there are over 400 varieties of mango worldwide. My favorite, from the three or four varieties I’ve tried, is the champagne mango. I’m seriously considering a trip to India just to sample mangoes.

Baked Tofu with Ginger

This simple and easy Tofu recipe will be a favorite. Tofu is a great health alternative to meat protein. Tofu is soybean curd that is produced by curdling fresh hot soymilk with a coagulant. The flavor of tofu is bland and easily absorbs flavors from other ingredients it is cooked with. It can be found in extra firm, firm, soft and silken varieties. Extra firm and firm tofu are solid and can be cubed or sliced. It can be grilled or marinated and baked, added to stir-fries, soups and stews. Three ounces of firm tofu contains 85-90 calories, 9 grams of protein, 2 grams of carbohydrate, 4 grams of fat, 200 milligrams of calcium and is also high in B vitamins. Enjoy!
