This is a great twist on an old time favorite. Lasagna is loved around the world and this recipe really hits the spot when you are craving a real Italian style meal without all the guilt! Enjoy!
Prep: 15 min, Cook: 35 min, plus cooling time.
1 lb. ground beef
4 small zucchini, cut into 1/4 inch slices
1-1/4 cups buttermilk baking mix
2 cups spaghetti sauce
1 cup small curd cottage cheese
1 egg
1/2 cup grated Parmesan cheese
Preheat oven to 350°F. Heat a heavy nonstick skillet over medium high heat. Add ground meat and cook 4-5 minutes, stirring frequently until browned. Drain. Place zucchini slices in a single layer in a greased 8 inch square baking dish. Sprinkle with 1/4 cup baking mix. Top with beef and spaghetti sauce. Combine 1 cup baking mix, cottage cheese and egg in a bowl until a soft dough forms. Spread dough over sauce. Sprinkle with Parmesan cheese. Bake uncovered about 30 minutes, until hot and bubbly. Cool 10 minutes.
